Rocky road of recovery – gluten-free, dairy-free, not taste-free brownie

What’s the best thing to do when you feel a bit mizog and it’s your birthday?  Bake your own cakes of course.

I cheated a bit with my rocky road as I used Bob’s Red Mill brownie mix:

Ingredients:

Whole packet of Bob’s Red Mill brownie mix (sugar, cocoa powder, potato starch, sorghum flour, tapioca flour, gf corn flour, xanthan gum)

115g melted dairy-free margarine

120ml warm water (it says 43 degrees but whatevs)

1 large egg (can sub a quarter cup of apple sauce for egg-free)

60g of dark chocolate chips (half for baking / half for topping after baking)

1 tsp vanilla extract

Many marshmallows for topping (for vegan you can leave these off or find gelatine-free mallow)

Handful of nuts should you so wish

Bobby recommends you use a 9″x9″ pan; I use a 30cm x 10cm baking dish, all fine.
