Baked berry oatmeal (otherwise known as posh porridge)

As inspired by the wonderful Purely Elizabeth

Ingredients and recipe:

1 tsp coconut oil

Cup of berries

Half a cup of gluten-free oats

Half a cup of rice milk

1 tbsp (1.5 dessert spoons) maple syrup

1 tsp cinnamon

Dash of vanilla extract

1 egg (not vital)

Porridge prep

I used a normal frying pan: pop the coconut oil into the pan, then the berries for a couple of minutes (I used frozen berries as they’re cheaper).  Then add all of the other ingredients.  If you are using an egg ensure this is fully mixed in.  Allow to cook for 5 or so minutes, take in the delicious scent!  Then turn the oven on to about 200 degrees and bake for 12 minutes.  Finally, scoff.  What a sweet treat 🙂
